It’s My Wedding Anniversary and I Want a Raw Vegan Lemon Cheesecake to Celebrate by Robin M. Wilson

Today, my husband Khari and I celebrate eight years of marriage! Yesterday, we kicked off our celebration with a visit to the local drive-in movie theatre and we plan to celebrate throughout the week. We always have dinner together on our anniversary. However, one thing that we have never done is eat our wedding cake. That’s right! We never had a piece of our wedding cake.


In 2012, after a beautiful ceremony at my church, we took tons of photos with family and friends who joined us for the reception. We even took photos cutting our elegantly decorated four-tiered white cake. It was designed by a family friend and church member. However, at the end of the day, we never had a chance to taste our cake. I think this is the only thing that we regret about our wedding day. For this reason, we agreed that we want to have a cake to celebrate our anniversary.


Of course, eight years ago, I was not vegan and I ate refined sugars. Still, even now, I love cake and the occasional treat as long as it is vegan and sugar-free. Needless to say, I can no longer randomly walk into a cake shop and place a special order. Most bakeries do not offer vegan dessert options, and if they do, they often are not sugar-free. So, Khari and I plan to make a raw vegan lemon cheesecake this month to celebrate our eighth anniversary.


Recently, I discovered a raw vegan lemon cheese cake recipe online that looks and sounds delicious. I plan to modify the recipe slightly to make it sugar-free and I cannot wait to see how it turns out. While Khari is not vegan, he agreed that a raw vegan lemon cheesecake sounds good. Now, we will finally enjoy cake in celebration of our special day.
